Favourite Thanksgiving Recipes: Day Five: 7UP Biscuits

Found these at a blog The Plain Chickenand had to try them.  Was NOT disappointed! Easy to make and really moist and delicious!  Apparently they taste like the ones you get at Popeyes…I’ve never tried those because until just a couple months ago we didn’t have a Popeyes around here but I’ll taste test them and let you know.  You should visit the Plain Chicken blog – so many great sounding recipes there!

biscuits Pen Waggener

Ingredients:

2 cups baking mix, like Bisquik

1/2 cup sour cream

1/2 cup 7UP

1/4 cup melted butter

Instructions:  Cut the sour cream into the baking mix.  Add the 7UP and mix well together into a soft dough.  Sprinkle out some of the baking mix to cover your work surface, place the dough on top and pat it out.  I found my dough to be beyond soft – it was gooey and needed to sprinkle extra baking mix over it in order to be able to cut it.  I wasn’t able to use a biscuit cutter and found that simply cutting into squares with a knife worked better.  Pour the melted butter into a 9 inch square baking pan.  Place the biscuits in the pan on top of the butter.  Bake at 450 degrees F for about 12-15 minutes until the biscuits are golden brown.  These are BY FAR the best biscuits I’ve ever tasted (and I am SUPER fussy about biscuits – most I don’t care for so this is saying a lot!).
