Salad Week: Day 3: Carrot Cucumber Salad

Ingredients:

Julienne the following:

1 English cucumber

2 carrots

1 medium shallot

Combine the following until sugar is dissolved:

1/2 cup rice vinegar

2 T. sugar

1/2 tsp. salt

1/2 tsp. chili sauce

1/2 tsp. sesame oil

Instructions:  Simply toss the veggies with the dressing.  You can serve right away or make this up to a day ahead of time.
