Simple Cuban Style BBQ Pork Tenderloin with Lime

1 1/2 lbs. pork tenderloin

4 cloves of garlic,  cut into thin slices

2 T. grated lime peel

1 T. olive oil

2 tsp. fresh lime juice

1/2 tsp. honey

Salt and pepper to taste

Instructions:  Make slits in the top of the tenderloin and place the pieces of garlic in these slits.  Stir together the peel, oil, lime juice, honey, salt, and pepper.  Brush this mixture over the tenderloin and allow to sit and marinate a bit while the grill heats up.  Place the tenderloin on the grill over medium heat or coals and cover the grill.   Grill for about 20-25 minutes turning and basting several times.  A meat thermometer inserted in the center of the tenderloin should read 160 degrees F when the tenderloin is done.
