Maple Condiments

This is an absolutely delicious maple vinaigrette.  I love to use this on a salad that I have garnished with nuts such as almonds or pecans.  It’s good with fruits added too – I like chopped apples or pears, mandarin orange segments or raspberries with this.  I can imagine that strawberries would be good with this as well but alas I am allergic and can’t test it myself.

Ingredients:

2 T. maple syrup

1 tsp. Dijon mustard

3 T. balsamic vinegar

1 T. lemon juice

1 clove garlic, minced

1 cup extra virgin olive oil (or vegetable oil if you prefer a lighter taste)

salt and pepper to taste

Instructions:  Whisk together all ingredients except the oil and salt and pepper.  Blend in the oil until creamy and well blended.  If you use a hand blender, it will be creamier than if whisked by hand.  Season to taste with salt and pepper.  Keep covered in the refrigerator.

Maple Syrup BBQ Sauce

Ingredients:

3/4 cup maple syrup

1/3 cup soy sauce

1/2 cup sherry or beer

1/2 tsp. ground ginger

3/4 tsp. dry mustard

1/4 tsp. nutmeg

1/4 tsp. cloves

salt and pepper to taste

Instructions:  Mix all ingredients together.  Marinate meat in it overnight and use to baste frequently while grilling or broiling.

Maple Mayonnaise

Ingredients:

2 cups olive oil

5 T. cider vinegar

1 T. maple syrup

2 cloves garlic

1 tsp. paprika

1 tsp. dry mustard

1 tsp. turmeric

salt to taste (I generally use about a teaspoon of sea salt)

Instructions:  Mix all ingredients together in a blender until smooth.  Store covered in the refrigerator.  Adds a lovely flavour to sandwiches such as ham, cheese, and sliced apple or roast turkey, cheese, and sliced pear but I’m sure you can come up with many alternatives to use it with as well.  It’s also a nice condiment to serve alongside of foods as a dipping sauce or something to dollop on top.  Can be used as the base for a creamy salad dressing as well.
