Tangy Chicken Stirfry

1/2 cup Miracle Whip

1 T. soy sauce

1/2 tsp. ground ginger

2 T. oil for stirfrying

3 boneless skinless chicken breasts cut into thin strips

1 cup each broccoli florets, cauliflower florets, and carrot slices

1/4 cup green onion slices

1 minced garlic clove

Instructions: Combine the Miracle Whip, soy sauce, and ginger. Heat the oil in your wok or a large deep skillet over medium high heat. Add the chicken strips to the wok and stir fry for about 4 minutes. Add the vegetables and the garlic and stir fry another 3-5 minutes until the chicken is cooked through and the vegetables are tender but still crisp. Stir in the Miracle Whip mixture and simmer it for 30 seconds. Serve over rice.
