Red Hot Applesauce

3 lbs. apples cored and quartered (the original recipe suggests McIntosh apples)

1 cup apple cider

1 tsp cinnamon red hot candies

¼ cup sugar

2 T. fresh lemon juice

Pinch of salt

Directions:  In a large covered pot such as a Dutch oven, combine the first three ingredients.  Bring this mixture to a boil and then reduce the heat.  Let it simmer, partly covered, for about 20-30 minutes until the apples have softened.  Stir the apples frequently with a wooden spoon as they simmer to help the apples break down.  Stir in the remaining ingredients and simmer for an additional 5 minutes to thicken the mixture slightly.  If you would like a smooth applesauce, run this mixture through a food mill.  For a chunkier texture, simply use a fork to remove the apple skins.
